Considered as the cultural heartland of Morocco, Fes' heritage has been preserved in the sprawling alleyways of the medina which radiate ancient history. Even now you'll hear the call of "Balak!" warning of an oncoming donkey, still the only form of transport in the old city. The labyrinthine souks fan out from Old Fes, a warren of aromatic food stalls, buzzing craft workshops and local community groups. Fes is undergoing somewhat of a revival, and while the medina receives a facelift its riads have been upgraded with beautiful parks and gardens. Fast-paced, charming and utterly romantic, Fes eclectically mixes old and new where satellite dishes are as likely to puncture the sky as minarets.
The souks of Old Fes can sometimes be overwhelming in their scale, but your A&K guide will introduce you to the wonderful craftsmen - many are old friends or classmates who can give you a fantastic insight into the inner workings of the bazaar. Here knowledge is passed down through generations, from the intricate carving of dark cedar to the painstaking painting of zellij tiles. The Bou Inania Medersa, a theological college, is one of the few religious places in Morocco accessible to non-Islamic visitors; finished in 1357, it has been beautifully yet Sympathetically restored. We recommend losing yourself for a few hours in the souks; ambling down tiny alleyways is the best way to stumble upon hidden treasures.
