First opened in 1908, the original hotel's majestic setting played host to many glamorous balls, conferences and social gatherings of the early 20th century. Just over a century later, Project Director James Mercer, headed up an incredible four and a half year contemporary restoration project. Built during a period when architecture was very eclectic, James and his team have thoughtfully worked to allow the building's true soul to be retained, and the end result certainly lives up to all expectation.

As you pass by the doormen - dazzlingly dressed in all white - and move into the grand entrance - the heart of every peninsula - you encounter elegant curved ceilings and impressive artworks reflecting upon the immaculate marble floors. This modern yet classic style continues into the spacious rooms and suites which are equipped with the latest high-tech gadgets and accessories; we particularly love the Katara Suite which gushes with Parisian glamour and city views from an exclusive rooftop garden. All rooms and suites feature an apartment-inspired layout, a walk-in closet, dressing table and valet box for anything from shoe shining services to the delivery of laundry.

Chef Sidney Redel is the innovator behind restaurant, L'Oiseau Blanc and its delicious menu; dishes range from Brittany langoustines and veal sweetbread to start, to Lozére lamb and turbot for main. We recommend trying their signature cocktail, The Heartbeat; the tantalising medley of bubbly, Chambord, lemon juice and basil is really rather moreish! Alternatively at LiLi's restaurant, you can taste exceptional Cantonese cuisine prepared by a formidable band of award-winning Hong Kong chefs.
